French Toast or Eggy Bread
4 eggs
1 cup soy milk
1 tsp. vanilla
1 tsp. nutmeg
6 slices of milk-free bread
1. Beat well in a shallow dish the eggs, soymilk, vanilla and nutmeg.
2. Saturate each bread slice in the mixture. At least a minute on each side.
3. Fry each piece in Country Crock Margarine® until a golden brown.
4. Serve with homemade syrup below.
Mom’s Home-made Syrup
2 cups Brown Sugar Splenda® (or brown sugar)
1 cup water
Bring water and brown sugar Splenda® to a boil.
Serve over French toast or pancakes.

Welcome!
This blog has come about because of my son, Mike. It was not until he was in his late teens that it became apparent he was severely lactose-intolerant. Learning that milk is added unnecessarily to so many food products can make the natural need to eat like walking through a minefield! Who would expect to find milk, or its by-products, in hot dogs or smoked sausage? Trial and error has helped me find ways to restore the pleasure of eating.
